Honey Garlic Chicken

Honey Garlic Chicken is my new lazy-day favorite cause WOW, it’s yummy. It’s super easy and you will likely already have many of these ingredients lying around the house. It’s the perfect meal to keep in your recipe reserve for those tiresome weeknights, which (as I’m sure we all know) can creep up in an instant on the evenings when we’re most exhausted. Don’t worry, this recipe is here to rescue you.

This lovely little entree was concocted for my own personal sanity. With how frenetic this week has been, quick and easy meals are much needed. Throw some rice and sauteed or steamed vegetables on the side and you have a quick, well-rounded meal. We really can’t get enough of it! My family and friends all love this dish, and it’s fast, affordable, and tastes like it takes a lot more effort to make than it truly does. It’s only eight ingredients, takes 25-30 minutes tops, and happens to work beautifully with other protein substitutions such as salmon, beef, pork, and shrimp!

Ingredients
  

  • 1 ½ lbs chicken thighs (fat trimmed and chopped into 1-inch cubes)
  • 2 tbsp cornstarch
  • 1-2 tbsp olive oil
  • cup honey
  • ¼ cup low sodium soy sauce
  • 1 tbsp rice vinegar
  • 2 tbsp brown sugar
  • 1 tbsp minced garlic (I prefer jarred, if you use fresh, use about 3 cloves)
  • salt and pepper (to taste)
  • sesame seeds (garnish)

Instructions
 

  • Take chicken thighs, trim excess fat, and cut the chicken into 1-inch cubes.
  • Heat olive oil in a medium pan at medium-high heat.
  • Toss chicken with cornstarch and place into the pan once the oil is hot, stirring and flipping the chicken occasionally. Cook for 10-15 minutes or until the chicken is cooked all the way through.
  • In a medium bowl, combine honey, soy sauce, brown sugar, garlic, rice vinegar, and garlic.
  • Pour the sauce into the skillet and allow it to simmer for 2-3 minutes.
  • Drop the heat to low and allow the chicken and sauce to simmer until thick and sticky.
  • Remove from the heat, salt and pepper to taste, garnish with sesame seeds and serve.
